Part three: Cook! I get asked a lot why does chicken need to be cooked all the way through, while red meat does not? Basically, different types of bacteria are founds in the different meats. Don’t let me scare you; we cook and kill the bacteria! The bacteria found in red meat develops where the meat is exposed to the air. So that’s why people wanting the rarest meats still need to have it cooked briefly on either side. Chicken however is a whole different kettle of fish (pun intended); as the bacteria can exist in the whole muscle, so it needs to be cooked all the way through. Remember you can only re-heat meat une fois (that once in French).
