The final installment (food safety): Chill! There is a belief amongst many people that once food has been cooked it should be allowed to cool fully before storing it. The fact is food should be stored as soon as it stops steaming. Pop your munchiables in a container, or cover in cling wrap/al foil and pop in the fridge or freezer. By leaving your food out to cool completely it allows it to be exposed to ‘the danger zone’ 5-60°C for longer. This danger zone is bacteria’s ideal living situation.
